Steamed Yam Cake

Always feel like make Yam Cake at home, and it is about a year ago. Wind don't know blew from which part to me.. hahaha.. finally, I cooked and taste good (recipe from Agnes Chang).. like her recipes very much, not too salty and outcome always "perfect"!! Highly recommend her recipe books... : P Would like to share the recipe here -


 Ingredients:
600gm      yam, cleaned and diced
4 tbsp      dried prawns, socked and pounded
3 tbsp      chopped tai tou choy (preserved vegetable) - i didnt put this
1 tsp        five spice powder
 4 pips garlic, chopped
6 tbsp oil

Batter (mixed and stained):
300gm      rice flour
75gm        tapioca flour -  i use butterfly corn flour
1200ml     water
1/2tsp       alkaline water

Seasonings:
1 cube chicken stock
1/2tsp  pepper
salt to taste

Garnishing:
spring onion, red chillies, fried shallots

METHODS:
1. Heat up oil, saute garlic until fragant, add dried prawn and stir fry until aromatic. Add yam, tai tau choy, five spice powder and stir fry until fragant.

2. Add batter, seasonings and stir until batter is half-cooked. Taste and pour mixture into a at least 22cm steaming tray. Steam with high heat for 1 hour until cooked. (I steamed 1 hour and 25 minutes)

3. Remove from heat, sprinkle all garnishing on top and leave to cool.
