Loh Mai Kai - Steamed Glutinous Chicken RIce





I have made this Loh Mai Kai for 2nd time and the 1st was failed, without giving up I tried 2nd time immediately the following day. YEAH, I have successfully made this super more steps and complicated recipe for this loh mai kai. My daughter whacked the whole loh mai kai and of course this is one of her favorites dim sum.

Minced Pork and Potatoes Curry Puff



Just make this curry puff and keeping this recipe for almost 1 year... Got this recipe from my mother in law's friend when she visited to our house. Interested to have this recipe? yeah.. I'm gonna share this recipe with you if you intend to make for your loves one... and today, I have make few and keep some for Hubby as he is away to Pulau Weh for his dive trip! Sure he will loves this curry puff,...

(the outcome supposed a crispy layer puff, but I accidentally added all ingredients and margarine pastry in a same dough, and surprisingly outcome is excellent good)

Ingredients A: (crispy skin)
---------------
300gm   Medium Flour 
1           Egg
5 oz      Cold Water
1 tbsp   Butter
pinch of salt
200gm  pastry margarine

Ingredients B: (filling)
----------------------
250gm   minced meat
500gm   potatoes (cut into cube)
5tbsp     curry powder ( i use England curry powder)
some curry leaves
salt to taste
1/2 tsb   sugar

Steamed Yam Cake

Always feel like make Yam Cake at home, and it is about a year ago. Wind don't know blew from which part to me.. hahaha.. finally, I cooked and taste good (recipe from Agnes Chang).. like her recipes very much, not too salty and outcome always "perfect"!! Highly recommend her recipe books... : P Would like to share the recipe here -


 Ingredients:
600gm      yam, cleaned and diced
4 tbsp      dried prawns, socked and pounded
3 tbsp      chopped tai tou choy (preserved vegetable) - i didnt put this
1 tsp        five spice powder
 4 pips garlic, chopped
6 tbsp oil

Batter (mixed and stained):
300gm      rice flour
75gm        tapioca flour -  i use butterfly corn flour
1200ml     water
1/2tsp       alkaline water

Seasonings:
1 cube chicken stock
1/2tsp  pepper
salt to taste

Garnishing:
spring onion, red chillies, fried shallots

METHODS:
1. Heat up oil, saute garlic until fragant, add dried prawn and stir fry until aromatic. Add yam, tai tau choy, five spice powder and stir fry until fragant.

2. Add batter, seasonings and stir until batter is half-cooked. Taste and pour mixture into a at least 22cm steaming tray. Steam with high heat for 1 hour until cooked. (I steamed 1 hour and 25 minutes)

3. Remove from heat, sprinkle all garnishing on top and leave to cool.

Mee Hoon Ker @ 板面

星期天的午餐又煮MeeHoonKer吃了。。什么是MeeHoonKer?我们福建人所叫的MeeHoonKer 就是板面!而所谓的面粉糕!每当煮这道美食我就会想起我的阿嫲!

以前阿嫲每个星期都会煮她最拿手的麦片面粉糕给全家人吃,一煮就是面粉 2 kilo 供一家20 口!! 宵夜才煮的!很想念我的阿嫲,虽然她已离开了我们有16 年,而那时我才Form 5, 阿嫲的一点一滴我都还记得一清二楚。虽然我们是一个大家族,但家规大顺女一定要学煮饭,听阿公,阿嫲的指示,爸爸妈妈为了尊重长辈,奉旨我一定要学烹饪!我很讨厌, 很讨厌这种生活,家里又不是没有工人,可以教工人煮的嘛!同学朋友都当我是千金小姐,所以我没有什么朋友,我很自卑。 其实我很想告诉他们我的生活不是那么豪华,我也是要做家务的,而他们才是不用做家务的!

然后爸爸告诉我,公公喜欢自己家人煮饭菜的,公公很注重亲情,我们一定要听!但公公又特别爱阿嫲,阿嫲不用煮!媳妇和大孙女一定要煮!

在我结婚了以后,我一点也不后悔,因为以前的苦练是给于我自己的。。 所以我很感恩! 不然的话,我就不会煮MeeHoonKer这一道美食。女儿和儿子也独爱我煮的MeeHoonKer。。

This is another my eldest brother, youngest sister, hubby and friends's favourite!! ha ha... looks yummy~~ super sour, spicy....

My best friend Agnes has not try this out yet !! Agnes, sure I will cook this for you when I am free to visit you!!~~!!!! Believe this is your favourites!!!!!

Weekend Lunch - Prawn mee

Since Ashley can't take spicy I have to reserve some chicken soup base for Ashley before I add in chilli prawn paste.
haha, another ichiban Prawn mee I have cooked. Hubby suggested me to resign and open a prawn mee food stall.

Baked Potatoes Pie


* cheng cheng** Another new recipe which is called "Baked Potatoes Pie". Husband & Me fall in love with this pie.

My own recipe :- (hope you can understand my recipe since i'm not taking from any recipe book)

Ingredients (A) :

1 can of Campbell Mushroom soup
1 can of Straw Mushroom (cut into small piece)
5 - 6 slices of chicken fillets (cut into small piece)
optional : you can also add-in sweetcorn/barley/carrot

Ingredients (B):

10 biji of medium potatoes - cut into small piece (depends on the size)
1/2 small packet of full cream milk (yourself to adjust)
2 thick slices of salted butter (yourself to adjust)
some salt
some pepper

Prepare Ingredients A - creamy mushroom soup base

1. Boil the chicken fillets & straw mushroom till cooked (koh lang hor). Then drain the chicken fillets & straw mushroom.
2. Then start boil with 1 can of mushroom soup and add-in 1/2 can of water into the soup. Stir well.
3. Then add-in the drained chicken fillets & mushroom. Stir well.
4. Put some pepper & add some black soy sauce to adjust the colour of the soup base.
5. After that, pour the creamy soup base into a baking tray or disposal baking tray. Leave aside.

Prepare Ingredients B - Potatoes.

6. Cut potatoes into small cube and boild till soft (easy to mash)
7. Drain the potatoes & mash the potatoes while the potatoes still hot.
8. Then add milk, salt, pepper, and butter into the mashed potatoes.

After all, put the mashed potatoes on top of the creamy mushroom base. Then bake the potatoes pie till golden brown. 160c (upper heat only) - 30 minutes

What I cooked, When the kids are at home

Stir mixed vegetables - baby carrot, lady finger, mushroom, nai bak cabbage & prawn
(I cooked with more sauce because the kids can take the sauce with rice since I don't have time to boil the soup)

Luncheon meat - the kids love this very much

The kids are back from Penang. Daddy asked the daughter "Baby, what you want to eat tonight? Can we go and eat Hakka Lui-cha?" The daughter told the daddy :" I dont want to go to restaurant, we asked Mommy to cook at home la, i love mommy's cooking, i want to stay at home, outside no good la" ..... Hubby looked at me and tell me :"your daugther is the one want you to cook not me". Then I walked into kitchen and open the fridge see what i can cook tonight. Hmmm.. I took all the leftover veges and a can of Laucheon meat. That's for all as hubby asked to cook a simple dinner wor!~

Dinner at Home - While the kids were in Penang (back dated post)

Nearly forgot to post these photos and almost a month ago. If you did follow my blog, you should know that my kids were back to penang. These are the followings dishes that I had prepared after I back from work. And, hubby is the one who cook the rice if he back home earlier than me. I were trying to cook those dishes that I don't cook while my kids at home because they can't eat those drunken chicken, spicy food at all.

Dinner for 2 only for this whole week...

Steamed Spicy & Sour Kam Cheong fish (thai style)
Ingredients : Tomatoes, Celery, Dried Mushroom, Asam, Salty Asam Mui (ham shui kat), Cili Padi, 2 bowls of water, and few drops of fish paste (yu lou)
(you can add some glass noodles too)
Fried Long bean, eggplant & lady finger with cili sambal
(i will upload the cili sambal sample later)

I have to cook for the whole week after work since in-laws and kids already back to hometown. My husband asked me no need to cook la as I alway go home late ever since I work in this new company. But I insisted to cook because I'm tired of "outside" food lor!!! I prefer homecook and I know and I can adjust the taste that I want lor~~ no matter how tired I am..... but the satisfaction after husband told me that the food is "yummy yummy" and he can actually eat 3 bowls of rice.... I feel I feel I feel "sooonnnngggg~~~" because husband finished up all the dishes and rice....

Today's Lunch Box

Today's lunch box for hubby and myself. Suddenly feel like eating fried rice, woke up at 6am and get this done by 6:15am. (I prepared all the ingredients last night since my kids are not around).

My 1st time Homemade Siu Loong Pau

Ashley has been asking for "siu loong pau" for 2 weeks ago. We brought her to restaurant and she grabbed the whole 4 pcs of siu loong pau. After the day, I decided to learn "homemade siu loong pau" for Ashley since she loves it so much.


I steamed 12 pcs and she finished 6 pcs of siu loong pau. Imagine how much she loves it eventhough I don't think is the perfect homemade siu loong pau, but I really feel Happy because she told me that : " Mommy, please do more for me next time, I love Mommy's cooking". I feel so satisfied after she told me that.. and I will keep it up my cooking skills.... and everytime after she finished the food that cooked by me, she will tell me " Mommy, i love your cooking, and the food so delicious, i love to eat at home rather than restaurant" ... after she told me.. i almost melted...
